    cake flour

    baking powder
  • pinch salt

    butter, diced
  • 125
    ml
    golden sultanas
  • 100
    ml
    castor sugar
  • 40
    ml
    coarse-cut marmalade
  • 2
    eggs, whisked
  • 100
    ml
    milk
 

Method

40-60 min
 
Preheat the oven to 160 ºC and spray a small loaf tin with non-stick spray. Sift the flour, baking powder and salt together and rub in the butter. Add the sultanas and sugar. Beat the marmalade, eggs and milk together and add to the dry ingredients. Mix well and spoon into the prepared loaf tin. Bake for about 40-60 minutes until done. Turn out carefully and cool. Serve with butter or for dessert with custard. Makes 1 medium-sized loaf.
