Marinda’s French toast treat

Ingredients

    extra large eggs
  • 30
    ml
    water
  • 4
    rashers back bacon - fat removed (chopped)
  • 8
    mushrooms,sliced
  • 1
    clove garlic, chopped, optional
  • 5
    ml
    oil, canola or oil
  • 4
    slices low GI bread
  • 30
    g
    lower fat cheese, grated
  • 20
    ml
    sweet chilli sauce
 

Method

10 mins
 
1. Beat the eggs and water, using a fork.
2. Fry the bacon in a frying pan, which has been sprayed with non-stick cooking spray. Remove from the pan and set aside.
3. Add the mushrooms and garlic to the same pan and stir-fry until the mushrooms are browned. Remove from the pan and set aside.
4. Heat the oil in the same frying pan.
5. Place the bread in a rectangular dish and pour over the egg. Turn so that both sides of all four slices are covered with egg.
6. Fry the egg-covered bread on both sides in the heated oil.
7. Place each slice of French toast on a plate.
8. Sprinkle each slice with a bit of bacon, mushrooms and grated cheese.
9. Grill under a hot grill for a few minutes until the cheese until the cheese has melted.
10. Evenly drizzle with the sweet chilli sauce.
11. Serve immediately with fresh fruit to make a balanced breakfast.
