Marinated vegetable salad

    yellow patty pans, quartered

    courgettes, trimmed

    artichokes, drained and quartered

    butter beans, drained
  • 200

    feta cheese, cubed

    French mustard
  • 2
    cloves garlic, crushed

    honey
  • 50
    ml
    lemon juice
  • 125

    olive oil
  • 50
    ml
    freshly chopped mixed herbs, such as basil, parsley and thyme
 

Method

 
Bring saucepan of water to the boil. Add the patty pans and boil for one minute. Drain and refresh with cold water. Use a vegetable peeler to peel courgettes into thin strips lengthways. Mix together patty pans, courgette strips, artichokes, butter beans and feta in a large bowl. HERB DRESSING: Mix together mustard, garlic, honey and lemon juice. Whisk in oil. Add herbs and pour over salad ingredients. Toss to coat, then refrigerate and allow to marinate for at least one hour before serving.
