Ingredients (6)

rosa tomatoes
garlic — cloves, unpeeled
salt and freshly ground black pepper
fresh chillies — 573
vinegar — balsamic
sugar

Method:

Place tomatoes on a baking tray. Add a few garlic cloves and season with salt and pepper.
Drizzle with oil and vinegar. Roast in a preheated oven at 160 ºC for 15 minutes. Reduce heat to 100 ºC and bake for a further 2 to 3 hours. Spoon tomatoes into clean glass jars. Sprinkle with sugar and top up with olive oil and a splash of balsamic vinegar. Gently shake to combine flavours.
Spread tomato mixture on bread or toss into salads or pastas. The tomato-flavoured oil is great for salad dressing or pasta dishes. Marinated tomatoes keep for up to 3 weeks in the fridge.
