Marinated tomato salad

Ingredients

  • 400
    g
    vine tomatoes
  • 100
    g
    Chevin goat’s cheese, sliced
  • 60
    g
    wild rocket leaves
  • DRESSING:
  • 1/2
    cup
    extra-virgin olive oil
  • 1
    clove garlic, crushed
  • 10
    basil leaves, torn
  • 2
    Tbs
    red wine vinegar
  • 1
    tsp
    white sugar
 

Method

Blanch the tomatoes in boiling water until the skins loosen, then refresh in ice water. Peel the tomatoes and set aside.

Combine the dressing ingredients and mix well.

Add the tomatoes and dressing to a large ziplock bag and refrigerate for 24 hours.

Arrange rocket and Chevin on a platter, top with tomatoes and dressing and serve.
