Marinated simmer hake with coriander

Ingredients (11)

1.00 kg hake — fillet, chopped
125.00 ml fresh chillies — 573
2.00 courgettes — sliced
1.00 onion — thinly sliced
60.00 ml vinegar — white wine
45.00 ml wine — white
2.00 garlic — cloves, crushed
5.00 ml coriander — seeds
5.00 ml sugar
sea salt and freshly ground black pepper

Method:

Heat oil and fry hake until pale gold. Remove, drain and arrange on a platter.
Using same pan, stir-fry vegetables for 2 to 3 minutes. Spoon over hake.
Add vinegar, wine, garlic, coriander seeds, sugar, salt and pepper to pan. Simmer for 2 to 3 minutes, stirring, and spoon over hake.
Sprinkle with fresh coriander leaves, chill lightly and leave to marinate.
Serve with slices of piping hot boiled potatoes sprinkled with dill and a little cream.
