Ingredients (14)

1.00 kg mixed seafood — frozen
0.00 flour — cake
0.00 sea salt and freshly ground black pepper
125.00 ml oil
4.00 bay leaves
1.00 lemon — sliced
6.00 fresh parsley
2.00 onions — large, sliced into rings
6.00 garlic — cloves, peeled
2.00 carrots — large, thinly sliced
5.00 ml paprika
180.00 ml grape vinegar
180.00 ml wine — white
100.00 ml water

Method:

Pour boiling water over the seafood mix and leave to defrost.
Pat dry and roll in cake flour seasoned generously with salt and freshly ground black pepper.
Heat a little of the oil and fry the seafood rapidly until tender and done, about 2 to 3 minutes.
Transfer to an earthenware dish.
Scatter the bay leaves, lemon slices and parsley on top and chill.
Heat remaining oil and sauté the onions, garlic and carrots until tender.
Add the paprika, vinegar and wine and simmer for 5 minutes.
Remove from the heat, add the water and leave to cool.
Pour over the seafood and marinate in the fridge for 24 hours.
