Marinated roasted vegetables

  • Mix together:
  • 100
    ml
    olive oil
  • 50
    ml
    balsamic vinegar
  • 50
    ml
    lemon juice
  • 3
    sun-dried tomatoes, chopped
  • 2
    cloves garlic, crushed
  • pinch sugar
  • salt and pepper to taste
 

Method

 
Pour the marinade over the vegetables while still warm and cool to room temperature. Serve with pot bread and braaied meat.
