Marinated potatoes and pumpkin

    potatoes, parboiled and cut into thick slices
  • 400
    g
    pumpkin, peeled and cut into thin slices
  • 30
    ml
    olive oil
  • 15
    ml
    lemon juice
  • DRESSING
  • 3
    cloves garlic, crushed
  • 1
    onion, finely chopped
  • 1
    ripe tomato, chopped
  • 2
    ml
    ground cumin
  • 5
    ml
    curry powder
  • 10
    ml
    lemon juice
  • 10
    ml
    sugar
 

Method

15 minutes
 
Toss the potatoes and pumpkin in the olive oil and lemon juice.
Place on a baking tray and cook under a medium-hot grill until tender and browned.
DRESSING
Stir the ingredients together. Pour over the hot veggies and toss to coat.
Season to taste with salt and freshly ground black pepper.
