Marinated potato salad with feta

Ingredients (11)

500 g baby potatoes — scrubbed clean
2 feta cheese — rounds
250 ml cherry tomatoes
1 spring onions — chopped
1 red onion — thinly sliced
cucumber — diced
watercress
SALAD DRESSING
65 ml fresh chillies — 573
30 ml vinegar — balsamic
30 ml lemon juice
honey — or sugar

Method:

Boil the potatoes in lightly salted water until tender and drain. Cut the feta cheese into small squares and add to the potatoes. Quarter the cherry tomatoes and add to the potatoes along with the spring onion, onion, cucumber and watercress. Blend the ingredients for the salad dressing and pour over the salad. Mix gently, cover and marinate for a few hours before serving.
Serve cold.
Serves 4-6.
