Ingredients (9)

1.00 onion — chopped
8.00 potatoes — cooked, peeled, sliced
garlic — cloves, crushed
100.00 g cheddar cheese — grated
salt and freshly ground black pepper — to taste
5.00 ml caraway seeds
75.00 ml fresh chillies — 573
75.00 ml vinegar — grape
30.00 ml fresh parsley — chopped

Method:

Pour a little boiling water over the onion and leave for a while. Drain and rinse under cold water. Arrange layers of potato, onion, garlic and the grated Cheddar cheese in a bowl with a tight-fitting lid. Sprinkle each layer of potato with a little salt and pepper and caraway seed. Blend the olive oil and grape vinegar and pour on top. Sprinkle with chopped parsley, cover and leave for a few hours, even overnight, to allow the flavours to blend. Turn the dish a few times to mix the oil and vinegar.
Serves 4-6.
