Marinated pepper salad

  • 3
    red, unblemished peppers
  • 3
    green, unblemished peppers
  • 3
    yellow, unblemished peppers
  • 125
    ml
    good red wine vinegar
  • 30
    ml
    medium dry sherry
  • 125
    ml
    olive oil
  • 5
    ml
    salt
  • 2
    ml
    freshly ground black pepper
  • 10
    ml
    sugar
  • 15
    black olives, stoned and sliced
 

Method

3 minutes
 
1. Seed the peppers, removing any thick membranes. 2. Cut into chunky pieces. 3. Place in a pan of boiling water and cook for 3 minutes. 4. Drain well and cool. 5. Mix remaining ingredients together, except for olives. 6. Layer the peppers and olives in a wide-necked sterilised jar and fill with the vinegar mixture. 7. Cover. 8. Store in the fridge. Marinate for 1 week before using.
