Marinated mussels

  • MARINADE

    oil
  • 65
    ml
    vinegar
  • 1
    lemon, juice
  • 1
    orange, juice
  • 190
    ml
    water
  • 5
    ml
    balsamic vinegar
  • 10
    ml
    sugar
  • pinch mixed herbs
  • 10
    ml
    prepared mustard
  • salt and freshly ground black pepper
 

Method

 
Defrost the mussels in tap water and drain. Beat together all the ingredients for the marinade and pour over the mussels. Chill, preferably overnight, stirring occasionally. Serve with farmhouse bread (see recipe).
