Marinated cherry tomato salad

    red peppers, seeded and cubed
  • oil for frying
  • 250

    red cherry tomatoes, halved
  • 125

    yellow cherry tomatoes, halved
  • 15
    black olives, seeded and halved
  • 175

    feta cheese, cubed
  • 6
    sun-;dried tomatoes in oil, coarsely chopped
  • 30
    ml
    freshly chopped basil
  • 30
    ml
    freshly chopped chives
  • salt and freshly ground black pepper to taste
  • 85
    ml
    olive oil
  • 5
    ml
    balsamic vinegar
  • 4
    thick slices bread (use rye or French bread)
 

Method

 
Sauté; the peppers in a little oil until glossy. Remove from the pan and mix with the tomatoes, olives, feta cheese and sun-dried tomatoes. Add the basil and chives and season to taste with salt and pepper. Blend the olive oil and vinegar and pour over the salad ingredients. Cover with plastic wrap and marinate for about one hour at room temperature. Spoon onto the slices of bread and serve immediately.
