Ingredients (13)

2.00 red pepper — deseeded and cubed
oil — for frying
250.00 g cherry tomatoes — halved
125.00 g cherry tomatoes — yellow, halved
15.00 olives — black, pitted and halved
175.00 g feta cheese — cubed
6.00 sundried tomatoes — in oil, coarsely chopped
30.00 ml fresh basil — chopped
30.00 ml fresh chives — chopped
salt and freshly ground black pepper — to taste
85.00 ml fresh chillies — 573
5.00 ml vinegar — balsamic
4.00 slices bread — thick,rye or french bread

Method:

Sauté; the peppers in a little oil until glossy. Remove from the pan and mix with the tomatoes, olives, feta cheese and sun-dried tomatoes. Add the basil and chives and season to taste with salt and pepper.
Blend the olive oil and vinegar and pour over the salad ingredients. Cover with plastic wrap and marinate for about one hour at room temperature.
Spoon onto the slices of bread and serve immediately.
