Marinated calamari and mushroom salad

    calamari rings

    water

    white wine

    sugar

    chilli flakes (optional)

    fresh button mushrooms

    green beans, trimmed

    large red pepper, sliced
 

Method

 
Wash calamari thoroughly and set aside. Bring water, wine, spices, sugar, garlic and chilli to boil. Add mushrooms and cook for 3 to 5 minutes. Remove, drain and place in salad bowl. Add beans to water and cook for about 8 minutes, until al dente, remove, drain and add to mushrooms. Repeat procedure with red pepper strips, cooking for about 2 minutes, and calamari, cooking for about 2 1/2 minutes. Toss all ingredients together and, while still warm, pour over a vinaigrette dressing made with lemon juice, olive oil, Dijon mustard, sugar, crushed garlic, salt and milled black pepper. TOTAL KILOJOULE COUNT: 3 390 kJ (810 Cal). A portion: 850 kJ (205 Cal).
