Wash calamari thoroughly and set aside.
Bring water, wine, spices, sugar, garlic and chilli to boil. Add mushrooms and cook for 3 to 5 minutes. Remove, drain and place in salad bowl.
Add beans to water and cook for about 8 minutes, until al dente, remove, drain and add to mushrooms.
Repeat procedure with red pepper strips, cooking for about 2 minutes, and calamari, cooking for about 2 1/2 minutes.
Toss all ingredients together and, while still warm, pour over a vinaigrette dressing made with lemon juice, olive oil, Dijon mustard, sugar, crushed garlic, salt and milled black pepper.
