Marinated brussel sprouts

    Brussels sprouts
  • 1
    onion, finely chopped
  • SALAD DRESSING
  • 100
    ml
    oil
  • 65
    ml
    white vinegar
  • 65
    ml
    lemon juice
  • 10
    ml
    grated lemon rind
  • 50
    ml
    finely chopped parsley
  • 2
    cloves garlic, crushed
  • 10
    ml
    prepared mustard
  • 7
    ml
    sugar
  • salt and freshly ground black pepper
 

Method

20-30 min
 
Boil the brussel sprouts in a little salted water until just tender. Drain well and cool slightly. Spoon into a mixing bowl and add the onion. Blend all the ingredients for the salad dressing and pour over the brussel sprouts and onions. Leave overnight so the flavours can develop. Stir occasionally. Serve 6-8.
