Marinated baked fish

Ingredients

    fillets firm white fish
  • 6
    spring onions, sliced
  • 2
    cloves garlic, crushed
  • 30
    ml
    each freshly chopped coriander and parsley
  • 40
    ml
    olive oil
  • 1
    ml
    each turmeric and chilli powder
  • 1
    lemon (juice and rind)
 

Method

15-20 min
 
Preheat oven to 180 ºC. Place fish fillets on individual pieces of aluminium foil. Mix remaining ingredients together and pour over fish. Season to taste. Fold foil over to form parcels. Bake in the oven or on a medium-hot fire for 15-20 minutes. Serves 4.
