Mareen's walnut cake

    white sugar
  • 375

    cake flour
  • 3
    extra-large eggs, separated
  • 10

    baking powder
  • 2
    ml
    salt
  • 125
    ml
    milk
  • 250
    ml
    walnuts, finely chopped
  • 5
    ml
    vanilla essence
 

Method

30-40 min
 
Preheat the oven to 180 ºC and grease a 20 cm cake tin with butter or spray with non-stick spray. Cream the butter and sugar until light and fluffy. Beat in the egg yolks. Sift the dry ingredients together and stir, alternating with the milk, into the butter mixture. Add the chopped walnuts and vanilla essence and mix through. Beat the egg whites until they form stiff peaks and fold carefully into the batter. Spoon into the prepared tin and bake for 30-40 minutes until done or a testing skewer comes out clean. Cool slightly in the tin, turn out and ice with butter icing or as desired. Makes 1 small cake.
