Ingredients (6)

1.00 crumpets — mix
oil — or non-stick spray
MAPLE AND FRUIT SYRUP
250.00 ml maple syrup
30.00 ml butter
250.00 ml fresh peaches — canned, sliced, drained
100.00 ml pecan nuts — toasted, chopped

Method:

1. Prepare the crumpets according to packet instructions. Cover and keep warm.
2. MAPLE AND FRUIT SYRUP: Gently heat maple syrup in a saucepan. Stir in butter and peach slices. If peach slices are fresh, allow to simmer gently in syrup for five minutes. If you are using canned slices, simmer for one minute. Stir in pecan nuts.
3. Stack crumpets on a serving platter or individual plates. Drizzle with syrup and serve immediately.
