Maple, peach and pecan syrup for crumpets

Ingredients

  • 1
    box homestyle flavour crumpet mix
  • oil or non-stick spray for frying
  • MAPLE AND FRUIT SYRUP
  • 250
    ml
    maple syrup
  • 30
    ml
    butter
  • 250
    ml
    fresh or canned sliced peaches (drained)
  • 100
    ml
    toasted pecan nuts, roughly chopped
 

Method

20-30 minutes
 
1. Prepare the crumpets according to packet instructions. Cover and keep warm. 2. MAPLE AND FRUIT SYRUP: Gently heat maple syrup in a saucepan. Stir in butter and peach slices. If peach slices are fresh, allow to simmer gently in syrup for five minutes. If you are using canned slices, simmer for one minute. Stir in pecan nuts. 3. Stack crumpets on a serving platter or individual plates. Drizzle with syrup and serve immediately.
