Mango sorbet

Ingredients

  • 200
    g
    sugar
  • 250
    ml
    water
  • 1
    l
    mango juice
  • 1
    orange (grated rind)
  • 2
    egg whites, stiffly whisked
 

Method

 
Place the sugar and water in a saucepan and heat slowly until the sugar has dissolved completely.
Increase the heat and boil the syrup for 3 minutes.
Chill.
Blend the syrup with the mango juice and orange rind.
Freeze the mixture until the edges just begin to harden.
Remove and beat well and fold in the beaten egg whites.
Freeze again, beating twice more during the freezing process.
Freeze until frozen.
