Malva pudding tartlets with caramel sauce

    port

    butter

    apricot jam

    cake flour

    bicarbonate of soda
  • pinch salt
  • CARAMEL SAUCE
  • 100
    g
    butter
  • 150
    ml
    sugar
  • 100
    ml
    evaporated milk
 

Method

 
Preheat the oven to 180 °C and use non-stick spray to grease 10 muffin tins with deep hollows.
Whisk the sugar and egg until thick and light.
Heat the milk, port, butter and jam over low hear. Stir.
Sift together the flour, bicarbonate of soda and salt and fold into the egg mixture along with the lukewarm milk mixture.
Pour the batter into the prepared tins and bake for 45 minutes.
Slowly heat the caramel sauce ingredients, until the sugar has dissolve.
Bring to the boil and simmer for two minutes.
Prick the tartlets with a fork and pour the sauce over warm puddings.
Serve with custard.
