    salt

    baking powder

    cream of tartar

    bicarbonate of soda
  • 250
    g
    margarine
  • 750
    ml
    buttermilk
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease two 24 x 24 x 5 cm tins with margarine. Combine all the dry ingredients, including the raising agents, in a large mixing bowl. Melt the margarine and cool slightly before adding the buttermilk. Add to the dry ingredients and mix well. Turn the mixture into the prepared tins and bake for about 60 minutes or until a testing skewer comes out clean when inserted into the centre of the rusks. Turn out onto a wire rack and cool completely. Cut into rusks and arrange on baking sheets. Dry out at 100 ºC (200 ºF) and store in airtight containers. Makes about 60 pieces.
