Ingredients (8)

2.00 onions — sliced into rings
oil
2.00 tomatoes — peeled, finely chopped
1.00 rice — cooked
3.00 haddock — pieces
250.00 g peas — frozen
salt and freshly ground black pepper — to taste
2.00 eggs — hard-boiled, sliced

Method:

Sauté the onion in a little oil until soft. Add the tomato and simmer until a purée is formed. Mix the tomato and onion purée with the cooked rice and set aside. Cook the haddock in a little water until done and it flakes easily with a fork. Add to the rice mixture and mix lightly. Boil the peas in a little water and mix with the rice mixture. Season with salt and pepper to taste. Spoon onto a serving platter. Slice the hard-boiled eggs and arrange on top. Serve hot with a salad.
