Make your own coconut milk

  • dessicated coconut
  • water to cover
 

Method

 
Place 500 ml good quality desiccated coconut in a saucepan and add just enough water to cover it. Bring to the boil and boil covered for 5 minutes. Remove from the heat and drain off the liquid, pressing out as much liquid as possible. Repeat the process using the same coconut 3 times. This drained liquid may then be used as coconut milk.
