Method

 
Preheat oven to 180 ºC. Grease a muffin pan. 1. Mix together apricots, orange rind and juice in a bowl, allow to stand for 10 minutes. 2. Stir in the buttermilk, butter, honey and eggs. 3. Combine flour, baking powder, muesli and wheatgerm. Make a well in the centre and add apricot mixture, stir mixture until well combined. 4. Spoon into hollows of the muffin pan and sprinkle with topping. 5. Bake for 20 minutes. TOPPING: Mix together all ingredients.
