Maine clam chowder

    clams or mussels, cleaned
  • 750
    ml
    white wine
  • 45
    ml
    butter
  • 500
    ml
    cream
  • salt and milled black pepper
  • GARNISH
  • 30
    ml
    sliced garlic, fried in a little oil until golden
  • 15
    ml
    strips of lemon peel
 

Method

 
Place clams and wine in a large stockpot. Simmer for 10 minutes or until clams have opened. Add butter and cream, season and simmer for 15 minutes. Ladle into large bowls and garnish with garlic and lemon peel. Serve with crusty bread.
