    homemade or frozen shortcrust pastry, defrosted

    egg yolks

    castor sugar
  • 15
    ml
    grated lemon peel
  • 30
    ml
    ground almonds
  • 30
    ml
    thick cream
 

Method

 
Roll pastry out thinly. Cut out 8 cm rounds and use to line buttered and lined patty pan sheet with 6 cm diameter hollows. Beat egg yolks with sugar, a little lemon peel, ground almonds and then cream. Fill each hollow to three quarters full. Decorate with remaining lemon peel and bake at 200 ºC for 15 to 20 minutes. Remove from sheet while still hot and leave to cool on a wire rack. TOTAL KILOJOULE COUNT: 9 160 kJ (2 190 Cal). A portion: 765 kJ (180 Cal).
