Magnificent muffins

    boiling water

    buttermilk

    bicarbonate of soda

    cake flour
  • 300
    g
    wholewheat flour
  • 10
    ml
    salt
 

Method

Combine the bran and boiling water in a large mixing bowl. Add the butter or margarine and allow the mixture to cool slightly. Add the sugar, eggs and 750 ml of the buttermilk and mix well.

Dissolve the bicarbonate of soda in the remaining buttermilk and add to the bran mixture. Mix. Mix the cake flour, wholewheat flour and salt together in a mixing bowl and add the mixture to the bran mixture. Mix to form a very slack batter.

Grease a microwave-safe muffin pan and microwave at 100 per cent power for 10 minutes, turning every two minutes.
