Magic muffins

  • non-stick cooking spray
  • 250 ml cake flour
  • 65 ml wholewheat flour
  • 250 ml brown sugar
  • 7 ml ground ginger
  • 3 ml baking powder
  • 2 ml bicarbonate of soda
  • 2 ml cinnamon
  • 2 ml nutmeg
  • pinch of salt
  • 125 ml apple sauce
  • 80 ml molasses
  • 45 ml low fat buttermilk
  • 2 egg whites, lightly beaten with a fork
  • 375 ml pitted dates, chopped


Prehat oven to 200 °C.
Lightly coat a 12-cup muffin pan with non-stick cooking spray.
In a large bowl, combine flours, sugar, ginger, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt.
In a small bowl, combine apple sauce, molasses, buttermilk and egg whites.
Add the apple sauce mixture to the flour mixture.
Stir until just combined.
Fold in dates.
Divide batter among muffin cups.
Bake 15-17 minutes or until golden and muffins are pulling away from the pan.
