250.00 ml apples — finely chopped
250.00 ml orange juice
0.00 ml Buttermilk
0.00 ml apple sauce
2.00 eggs — white
250.00 ml flour — all-purpose
250.00 ml flour — wholewheat
250.00 ml oats — rolled
250.00 ml sugar
0.00 ml Bicarbonate of soda
5.00 ml cinnamon — ground
0.00 ml salt
30.00 ml sugar
0.00 ml nutmeg — ground

Method:

Preheat oven to 200 ºC. Spray a 12-hollow muffin pan with nonstick cooking spray.
Combine apple pieces, orange juice, buttermilk, apple sauce and egg whites in a bowl. Mix well.
In a large bowl, combine flours, oats, sugar, bicarbonate of soda, 1/4 t cinnamon and salt.
Pour buttermilk mix into flour mixture and stir until moistened. Pour batter into hollows in muffin pan until two-thirds full.
In a small bowl, combine 1/4 t cinnamon with remaining ingredients. Sprinkle evenly over muffin batter and bake for 18 to 20 minutes, or until golden.
Per muffin: 624 kJ; 32 g carbohydrate; 3 g protein; 1 g fat
