Method

 
Preheat oven to 200 ºC. Spray a 12-hollow muffin pan with nonstick cooking spray. Combine apple pieces, orange juice, buttermilk, apple sauce and egg whites in a bowl. Mix well. In a large bowl, combine flours, oats, sugar, bicarbonate of soda, 1/4 t cinnamon and salt. Pour buttermilk mix into flour mixture and stir until moistened. Pour batter into hollows in muffin pan until two-thirds full. In a small bowl, combine 1/4 t cinnamon with remaining ingredients. Sprinkle evenly over muffin batter and bake for 18 to 20 minutes, or until golden. Per muffin: 624 kJ; 32 g carbohydrate; 3 g protein; 1 g fat
