50.00 g butter
1.00 eggs — large
vanilla — essence
55.00 g castor sugar — sifted
50.00 g flour — cake
1.00 orange — zest only
icing sugar — for dusting

Method:

Preheat oven to 190 ºC. Grease patty pan cases. Melt butter, then cool. Whisk egg, vanilla essence and sugar in a large mixing bowl until a very thick mousse that leaves a trail is formed. Sift flour over the bowl and fold into mixture. Then fold in butter and zest. Fill moulds with mixture and bake for eight minutes. Turn out on a cooling rack and dust with icing sugar. Dip into melted orange butter and serve hot.
