Macaroni with meatballs

Ingredients (12)

250.00 g pasta — macaroni, uncooked
15.00 ml oil
1.00 onion — finely grated
2.00 celery stalks — chopped
oil
100.00 g cheddar cheese — grated
250.00 ml milk
2.00 eggs
salt and freshly ground black pepper
500.00 g beef mince
25.00 ml fresh parsley — chopped
1.00 tomatoes — sliced

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 26 x 22 cm oven dish with non-stick spray.
Boil the macaroni till al dente in rapidly boiling salted water to which a little oil has been added. Drain and set aside. Saute the onion and celery in a little oil till soft and mix with the macaroni. Add the Cheddar cheese and mix well. Turn into the prepared dish.
Beat the milk and eggs together, season with salt and pepper and pour over the macaroni mixture.
Season the mince with salt and pepper, and add the parsley. Shape into fairly small meatballs.
Arrange the tomato slices on top of the macaroni and place a meatball on each tomato slice. Bake for 45 minutes or till the meatballs are cooked and golden brown. Serve with a tomato sauce.
Serves 6.
