Macaroni with chicken and vegetables

    cooked elbow macaroni

    cooked chicken, cut into smaller pieces
  • 500
    ml
    mixed vegetables
  • salt and freshly ground black pepper to taste
  • 125
    ml
    fruit chutney
  • 125
    ml
    mayonnaise
  • 100
    g
    grated Cheddar cheese
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Mix the macaroni, chicken and mixed vegetables in a large mixing bowl. Season well with salt and pepper. Blend the fruit chutney and mayonnaise and mix in half of the cheese. Add the fruit chutney mixture to the chicken mixture and mix lightly. Turn the mixture into a large ovenproof dish and sprinkle the remaining cheese on top. Bake for 20 to 30 minutes until heated through and the cheese has melted. Serve with a green salad.
