Macaroni cheese ring

    macaroni
  • 500
    ml
    cauliflower florets

    butter
  • 15
    ml
    cake flour
  • 250
    ml
    milk, heated
  • 125
    ml
    grated Cheddar cheese
  • pinch English mustard
  • 3
    eggs, whisked
  • pinch dried sage
  • salt and freshly ground black pepper
 

Method

35-40 minutes
 
Preheat the oven to 190 ºC (375 ºF) and spray a 1,25 litre metal ring mould with non-stick spray. Cook the macaroni for 5 minutes in rapidly boiling salted water and add the cauliflower. Cook until done but still firm and drain. Melt the butter in a pan, stirring in the cake flour. Heat for about 2 minutes over low heat, gradually add the milk while stirring continuously and heat until the white sauce comes to the boil. Remove from the heat and cool slightly. Add the cheese, mustard, eggs and sage to the white sauce and mix. Add the macaroni and cauliflower, mix carefully and season to taste with salt and pepper. Spoon the mixture into the ring mould and place the ring in an oven dish. Add enough boiling water to cover the ring halfway and bake for 35 to 40 minutes or until set. Remove from the oven and cool slightly. Turn out onto a hot serving platter and serve hot.
