Ingredients (9)

100.00 ml butter
100.00 ml flour
875.00 ml milk
0.00 sea salt and freshly ground black pepper
45.00 ml wholegrain mustard
1.00 fresh chillies — grated
250.00 ml gruyère cheese — grated
250.00 ml parmesan cheese — grated
500.00 g pasta — elbow macaroni

Method:

Melt butter in a saucepan, whisk in flour and cook for a minute or two until foaming.
Pour in milk and bring to the boil, whisking all the time until the sauce thickens.
Season and simmer for two minutes.
Take the sauce off the heat and stir in the mustard, chilli, all the Gruyère cheese and half the Parmesan cheese.
Fold macaroni into the sauce and dish up in big bowls.
Serve with remaining Parmesan and crusty bread.
