Macaroni cheese for grown-ups

    ml
    butter
  • 100
    ml
    flour
  • 875
    ml
    milk
  • salt and pepper to season
  • 45
    ml
    wholegrain mustard
  • 1
    chilli, grated
  • 250
    ml
    grated Gruyère cheese
  • 250
    ml
    grated Parmesan cheese
  • 500
    g
    elbow macaroni, cooked al dente
 

Method

 
Melt butter in a saucepan, whisk in flour and cook for a minute or two until foaming.
Pour in milk and bring to the boil, whisking all the time until the sauce thickens.
Season and simmer for two minutes.
Take the sauce off the heat and stir in the mustard, chilli, all the Gruyère cheese and half the Parmesan cheese.
Fold macaroni into the sauce and dish up in big bowls.
Serve with remaining Parmesan and crusty bread.
