Macaroni and ratatouille bake

  • 250
    g
    uncooked macaroni
  • 410
    g
    ratatouille
  • 3
    extra-large eggs, whisked
  • 250
    ml
    milk
  • pinch mixed herbs
  • salt and pepper to taste
  • grated Cheddar cheese OR a few pieces of feta cheese
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish with non-stick spray. Cook the macaroni in boiling salted water until soft. Drain well. Mix the remaining ingredients, except the cheese. Add the macaroni and mix. Turn into the prepared dish and sprinkle with the cheese. Bake for 1 hour or until the mixture has set. Serve with a salad. Serves 3-4.
