Macaroni and meat stew

    onion, sliced
  • 2
    cloves garlic, crushed
  • oil for frying

    stewing meat, cubed OR mince or chicken
  • coriander, salt and pepper to taste

    uncooked elbow macaroni
  • 2
    large potatoes, skinned and diced
  • 750
    mixed vegetables
  • onion soup powder (optional)
  • fresh parsley, chopped

In a large saucepan sauté the onion and garlic in a little oil till soft. Season the meat cubes to taste with coriander, salt and pepper and fry in the saucepan till browned. Add the macaroni and pour over 500 ml boiling water. Reduce heat and simmer till the macaroni is soft and the meat tender. Replenish the liquid constantly if required. Add the diced potato halfway through the cooking time for the macaroni and simmer with the macaroni till soft. Add the mixed vegetables and simmer till the vegetables are done but still crispy. Thicken the sauce with the onion soup powder if desired, allowing it to simmer. Season with freshly chopped parsley before serving. Serve with rice. Serves 6.
