Ingredients (11)

60.00 ml fresh chillies — 573
100.00 g macadamia nuts
2.00 garlic — cloves, finely chopped
300.00 g spinach — chopped
60.00 ml wine — white
50.00 g parmesan cheese — grated
500.00 g pasta
salt and freshly ground black pepper
120.00 g prosciutto — chopped, fried
parmesan cheese — grated
cheese — and olive oil, to serve

Method:

Heat oil in a frying pan, add macadamias and sauté over moderate heat for a few minutes, or until golden.
Add garlic and spinach and cook for 30 seconds. Remove from heat, add wine, grated Parmesan and hot pasta. Season to taste and toss well.
Serve in soup bowls, topped with prosciutto, extra grated Parmesan cheese and a drizzle of extra olive oil.
