Macadamia, spinach and prosciutto pasta

    ml
    olive oil
  • 100
    g
    macadamia nuts
  • 2
    cloves garlic, finely chopped
  • 300
    g
    chopped spinach
  • 60
    ml
    white wine
  • 50
    g
    Parmesan cheese, freshly grated
  • 500
    g
    pasta of your choice, cooked al dente
  • salt and milled pepper
  • 120
    g
    prosciutto, chopped and fried
  • extra grated Parmesan
  • cheese and olive oil for serving
 

Method

 
Heat oil in a frying pan, add macadamias and sauté over moderate heat for a few minutes, or until golden. Add garlic and spinach and cook for 30 seconds. Remove from heat, add wine, grated Parmesan and hot pasta. Season to taste and toss well. Serve in soup bowls, topped with prosciutto, extra grated Parmesan cheese and a drizzle of extra olive oil.
