Macadamia, coconut and coffee squares

Ingredients

  • 250
    g
    butter
  • 420
    g
    light brown sugar
  • 35
    ml
    instant coffee granules
  • 1
    ml
    salt
  • 2
    ml
    ground cinnamon
  • 270
    g
    self-raising flour
  • 3
    large eggs
  • 160
    g
    dessicated coconut
  • 100
    g
    macadamia nuts, toasted and roughly chopped
 

Method

approximately 1 hour
 
Grease a 22 x 32 cm baking tin.
Beat together the butter, half the sugar, the coffee, salt and half the cinnamon.
Stir in the flour a little at a time.
Spread into the prepared tin and bake in a preheated oven for 20 minutes.
Set aside to cool.
Beat togetherthe eggs and the remaining sugar and cinnamon.
Gently stir in the coconut and macadamia nuts.
pread over the baked layer and return to the oven for 40 to 50 minutes until golden and firm.
Cut into squares and cool on a baking rack.
