Ingredients (11)

1.00 eggs
190.00 ml brown sugar — soft
40.00 ml white sugar
5.00 ml vanilla — essence
125.00 ml oil
125.00 ml flour — cake, sifted
60.00 ml flour — self-raising, sifted
1.00 ml cinnamon — ground
125.00 ml dessicated coconut
330.00 ml macadamia nuts — toasted and chopped
190.00 ml white chocolate — chips

Method:

Use an electric beater to beat the egg and brown and white sugar until light and fluffy.
Add the vanilla essence and oil.
Use a wooden spoon to stir in the sifted flours, cinnamon, coconut, nuts and chocolate chips well. refrigerate for 30 minutes.
Preheat oven to 180 &degC.
Grease two baking sheets and line with baking paper.
Shape heaped tablespoons of the cookie mixture into balls and place them on the prepared baking sheets.
Press the mixture together with your fingertips if it crumbles.
Bake for 12 to 15 minutes or until golden.
Cool slightly on the baking sheets, then cool completely on wire racks.
Nutrition per serving: Protein 1,5 g; fat 10 g; carbohydrate 13 g; fibre 0,5 g; cholesterol 8 mg; 695 kilojoules (165 calories).
