Ingredients (12)

250 g bacon — rashers
5 ml honey
5 ml Dijon mustard
10 ml vinegar — red wine
15 ml fresh chillies — 573
1 lentils — tinned, drained and rinsed
4 apples — Pink Lady, sliced with lemon juice
100 g pecan nuts — roasted, chopped
200 g spinach — and rocket
100 ml dried cranberries
100 g blue cheese — crumbled
10 beetroot — baby, cooked, peeled

Method:

Fry the bacon until crisp, add the honey and fry until caramelised – beware, it burns easily! Beat together the mustard, vinegar and oil, season with salt and pepper, and stir through the lentils.

Arrange all the ingredients on a platter and serve immediately with fresh bread.
