Luxurious lentil salad

Ingredients

    bacon rashers
  • 5
    ml
    honey
  • 5
    ml
    Dijon mustard
  • 10
    ml
    red wine vinegar
  • 15
    ml
    olive oil
  • 1
    tin lentils, drained and rinsed
  • 4
    small Pink Lady apples, sliced and sprinkled with lemon juice
  • 100

    pecan nuts, roasted and chopped
  • 200
    g
    baby spinach and rocket leaves
  • 100
    ml
    dried cranberries
  • 100
    g
    blue cheese, crumbled
  • 10
    baby beetroots, cooked and peeled
 

Method

Fry the bacon until crisp, add the honey and fry until caramelised – beware, it burns easily! Beat together the mustard, vinegar and oil, season with salt and pepper, and stir through the lentils.

Arrange all the ingredients on a platter and serve immediately with fresh bread.
