Low-carb salmon sushi

    nori sheets (1 sheet makes about 6 little rolls)
  • 80
    smoked salmon
  • 12
    carrot sticks (6 per roll)
  • 12
    slices of cucumber, skin removed (6 per roll)
  • 1
    avocado, sliced
  • wasabi mayo for garnish
  • low sodium soy sauce for dipping


Toast the nori sheets for 20 seconds under the grill just on one side to make it crispy and to prevent chewiness.

Put the sheet down on a board and put the fish and veggies on one side. Roll tightly and use a little water to seal it – just on the seam.

Use a sharp knife to cut into pieces.

Put a little wasabi mayo on each piece and serve.
