1.00 avocado
300.00 g prawns — shelled
2.00 celery stalks — diced
4.00 walnuts — chopped
60.00 ml mayonnaise
15.00 ml cream
250.00 g rocket — leaves
0.00 sea salt and freshly ground black pepper

Method:

Halve and skin avocado. Remove stone and dice the flesh into small pieces.
Drop the prawns into boiling water for 30 seconds and cool.
Put the avocado in a bowl with prawns, celery and walnuts.
Make dressing by mixing mayonnaise and cream.
Arrange rocket on individual plates and spoon avocado prawn mixture over them.
Sprinkle with salt and freshly ground black pepper.
Drizzle with dressing and refrigerate until ready to serve.
