Ingredients (13)

PATTIES
500.00 g liver — sheep, cleaned, minced
250.00 g bacon — chopped
1.00 onion — large, grated
1.00 tomatoes — finely chopped
825.00 ml breadcrumbs — fresh
50.00 ml fresh parsley — chopped
5.00 ml vinegar — grape
Worcestershire sauce — dash
5.00 ml Baking powder
1.00 eggs — extra-large, whisked
sea salt and freshly ground black pepper
cake flour — seasoned
oil — for shallow frying

Method:

Mix all the ingredients for the patties and season generously with salt and pepper.
Heat a pan with enough oil for shallow-frying.
Shape the mixture into small patties and dust with cake flour. Shake off any excess flour and fry in hot oil until golden brown on both sides and cooked inside.
Drain on paper towelling and serve with mashed potato and a tasty gravy.
