  • PATTIES
  • 500
    g
    cleaned sheep's liver, minced
  • 250
    g
    bacon, chopped
  • 1
    large onion, grated
  • 1
    large tomato, very finely chopped
  • 825
    ml
    fresh breadcrumbs
  • 50
    ml
    chopped fresh parsley
  • 5
    ml
    grape vinegar
  • dash Worcestershire sauce
  • 5
    ml
    baking powder
  • 1
    extra-;large egg, whisked
  • salt and freshly ground black pepper
  • seasoned cake flour for rolling
  • oil for shallow-;frying
 

Method

 
Mix all the ingredients for the patties and season generously with salt and pepper. Heat a pan with enough oil for shallow-frying. Shape the mixture into small patties and dust with cake flour. Shake off any excess flour and fry in hot oil until golden brown on both sides and cooked inside. Drain on paper towelling and serve with mashed potato and a tasty gravy.
