Ingredients (9)

500.00 g sheep — liver
flour — cake
salt and freshly ground black pepper — to taste
1.00 onion — finely chopped
oil
54.00 g button mushrooms — sliced
60.00 g breadcrumbs — fresh
30.00 ml fresh parsley — chopped
8.00 bacon — rindless rashers

Method:

Preheat the oven to 180 ºC (350 ºF).
Slice the liver and roll in cake flour seasoned with salt and pepper. Arrange one third of the liver at the bottom of an ovenproof dish.
Sauté the onion in a little oil until soft. Add the mushrooms and stir-fry until pale brown. Remove from the pan and cool. Add the remaining ingredients, except the bacon, and mix well. Spoon half the mixture onto the liver in the dish. Repeat the layers until all the ingredients have been used, ending with the liver. Place rashers of bacon on top. Cover and bake for 30 minutes or until the liver is done.
Serves 4.
