125.00 g butter — chopped
250.00 ml sugar
5.00 ml vanilla — essence
2.00 eggs
335.00 ml flour
7.00 ml Baking powder
250.00 ml sour cream
85.00 ml almonds — ground
3.00 apples — sliced
15.00 ml brown sugar

Method:

Place butter, sugar and vanilla essence in a bowl. Beat well until light and creamy. Add eggs one at a time, beating well each time. Sift flour and baking powder over butter mixture and fold in with sour cream and almonds. Spoon into eight greased hollows of a muffin pan. Top each with the apple slices and brown sugar. Bake for 20 minutes, or until a skewer inserted into the centre comes out clean. Serve hot or cold.
