Little apple cakes

    butter, chopped

    sugar

    vanilla essence
  • 2
    eggs
  • 335

    flour
  • 7
    ml
    baking powder
  • 250
    ml
    sour cream
  • 85
    ml
    cup ground almonds
  • 3
    apples, sliced
  • 15
    ml
    brown sugar
 

Method

 
Place butter, sugar and vanilla essence in a bowl. Beat well until light and creamy. Add eggs one at a time, beating well each time. Sift flour and baking powder over butter mixture and fold in with sour cream and almonds. Spoon into eight greased hollows of a muffin pan. Top each with the apple slices and brown sugar. Bake for 20 minutes, or until a skewer inserted into the centre comes out clean. Serve hot or cold. Makes 8.
