Ingredients (6)

2.00 kg white sugar
3.00 Litres water
750.00 ml fresh lime juice — concentrate
30.00 ml lemon — essence
15.00 ml Tartaric acid
45.00 ml salt — epsom

Method:

Heat the sugar and water, stirring continuously to ensure that the sugar dissolves before the water comes to the boil. Boil for 5 minutes. Stir in the remaining ingredients and cool completely. Bottle in clean bottles.
Makes about 4,5 litres.
