Lime prawns with pineapple salsa

    prawns, deveined
  • PINEAPPLE SALSA
  • 1
    pineapple, peeled and cut into chunks
  • 2
    spring onions, sliced
  • 2
    chillies, chopped
  • 30

    brown sugar
  • 30
    ml
    lime juice
  • 125
    ml
    chopped mint leaves
  • 65
    ml
    chopped coriander leaves
  • 1
    small English cucumber, cut into ribbons with a vegetable peeler
 

Method

 
Combine lime juice, chillies, oil and cumin seeds in a bowl. Brush over prawns and leave to stand for 10 minutes. Grill prawns for 2 minutes on each side. SALSA: Combine all ingredients, except cucumber, in a medium-sized bowl. Place small piles of cucumber ribbons on serving plates and top with salsa. Top with prawns and serve.
