Lime and coconut tartlets

    egg whites
  • 500
    ml
    desiccated coconut
  • 125
    ml
    sugar
  • 150
    ml
    Nestlé Condensed Milk
  • 150
    ml
    Nestlé Dessert Cream
  • 300
    ml
    water
  • 2
    grated rind and juice of limes
  • 2
    egg yolks
  • 25
    ml
    cornflour
  • 10
    ml
    Custard Powder
  • pinch salt
  • 15
    ml
    butter
  • lime or lemon slices for decoration (optional)
 

Method

Preheat oven to 120 °C. Grease a non-stick muffin pan.
Mix egg whites, coconut and sugar together. Divide between 10 on the muffin holes and press mixture around base and sides of muffin holes to form a thin tartlet crust.
Place muffin pan on the lower shelf in oven, cover with foil and bake for 20-30 minutes until golden brown and bases are firm.
Leave for 5 minutes, then turn out and allow to cool on cake rack.
Mix Condensed Milk, Dessert Cream, lime or lemon rind and half of the water and heat until almost boiling. (2.5 minutes on high in microwave)
Mix cornflour, Custard Powder, salt, egg yolks and remaining water together.
Add to the hot milk and cook for 2-3 minutes, stirring constantly, until thick.
Beat in lime or lemon juice and butter. Spoon in to coconut tart cases.
Chill in the fridge. Place lime or lemon slices on tartlets and serve.
