Lime and chilli chickpeas

Ingredients

  • 150
    ml
    olive oil
  • 2
    onions, finely chopped
  • 2
    chillies, cleaned and sliced
  • 1
    piece fresh ginger, peeled and julienned
  • 3
    garlic cloves, crushed
  • 800
    g
    cooked chickpeas (cooked weight)
  • 4
    limes, grated rind and juice
  • 60
    ml
    freshly chopped coriander
  • thinly sliced lime, to garnish
 

Method

6 minutes
 
Heat 60 ml oil in a large frying pan and cook onions, chillies, ginger and garlic until soft and transparent. Add chickpeas and lime rind, tossing gently to warm though. Add lime juice and cook until evaporated then toss with remaining olive oil and season to taste. Mix in coriander before serving and garnish with slices of lime.
