Ingredients (9)

150.00 ml fresh chillies — 573
2.00 onion — finely chopped
2.00 fresh chillies — sliced
1.00 fresh ginger — peeled, julienned
3.00 garlic — cloves, crushed
800.00 g chickpeas — cooked
4.00 lime — zest and jucie
60.00 ml fresh coriander — chopped
lime — sliced, to garnish

Method:

Heat 60 ml oil in a large frying pan and cook onions, chillies, ginger and garlic until soft and transparent.
Add chickpeas and lime rind, tossing gently to warm though.
Add lime juice and cook until evaporated then toss with remaining olive oil and season to taste.
Mix in coriander before serving and garnish with slices of lime.
